      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Preheat the oven to 190 degrees celsius. Set the rack in the middle of the oven. Grease 12 friand moulds or muffin tins
  2. Place almonds into mixing bowl and mill 10 seconds, speed 10. Set Aside
  3. Place sugar into mixing bowl and mill 4 seconds, speed 9. Set Aside.
  4. Melt butter, 2 minutes, 90 degrees, speed 1.
  5. Place flour, icing sugar and milled almonds into bowl and mix 10 seconds, speed 4 and set aside.
  6. Place egg whites into bowl and beat 30 seconds, speed 4
  7. Add the flour, icing sugar, butter and almond mixture into the bowl, next add the vanilla essence. Combine, 20 seconds, speed 2. Scrape down sides with spatula and combine, 20 seconds, speed 2.
  8. Fill the greased tins 3/4 full and press the raspberries into the top of each tin, dividing evenly.
  9. Bake 25-30 minutes until golden brown and a skewer inserted into the centre comes out clean.
  10. Dust with icing sugar and serve.
