  • 60g warm water
  • 125g Milk, room temp
  • 1 large egg
  • 350g bakers flour
  • 1 sachet of dry yeast (7g)
  • 1tsp salt
  • 25g honey or sugar
  • 250g unsalted butter, cold cut into cubes

Recipe's preparation

    TM Danish Pastry
  1. Place all the dry ingredients into the TM bowl & mix for 5 secs speed 4. Add the butter & chop for another 5 - 10 secs on speed 5. You still want to see chunks of butter, add the egg, honey, milk & water. Mix for 1 min Dough mode. you will still have a gooey dough with some butter chunks this is what you want. Put the dough into a bowl & into the fridge & leave over night or until you are ready to use (for up to 4 days)

    Take the pastry out of the fridge & let it get to room temperature, roll it out to a big square 50cm x 50 cm. fold the dough into thirds, right side folding into the centre & then left side folding into the centre over the right side. Turn the dough 90 degrees & repeat the process of rolling out & folding into thirds 3 more times. 

    You may like to cut this dough in half & use the other half later as it makes alot.

    Choose sweet or savoury fillings for danishes or scrolls.

     

  2. Fillings & baking

    For a savoury scroll danish roll out to a large rectangle & spread with pesto & cheese then roll up & cut into scrolls with your spatula.

    For a sweet filling use thermomix custard & or your favourite fruits.

    Or try sweet cinamon cream cheese dip //www.recipecommunity.com.au/sauces-dips-spreads-recipes/cinnamon-vanilla-cream-cheese-dip/213569 as a filling with some of your favourite fruit or as shown here rhubarb.

  3. making the classic danish shape start with a square & place your fillings in the centre then fold over 2 corners.

  4. Place on baking paper & allow to rise for about 1.5hrs. If some of them come unfolded in this rise gently press them back together.

    Bake in a 180 degree oven for 15 mins or until cooked & golden tmrc_emoticons.-)

    Somepeople like to drizzle their favourite icing over sweet danishes or some icing sugar sprinkles over.
