Vanilla Fruit Biscotti

  • 75 g almonds
  • 75 g pistachio nuts
  • 100 g dried cranberries
  • 100 g almond meal
  • 200 g plain flour
  • 80 g caster sugar
  • 50 g honey

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Preheat oven to 170C and line a baking tray with baking paper.
    Place orange zest and caster sugar in bowl and blitz on speed 8 for 20 secs with MC on.
    Place almonds, pistachios, cranberries into bowl. chop for 3 sec speed 6 with MC on.
    Add remaining ingredients to bowl. Combine for 15 sec speed 3 with MC on.
    Scrape mixture onto baking paper using spatula and form two rectangle shapes of approx 10cm of 4 in wide.
    Bake for about 20 mins or until just starting to brown.
    Remove from oven and lower oven temp to 140c.
    Allow to cool for 30 mins, then using a serated knife slice into 1.5cm biscotti.
    Place back onto oven tray and bake for approx 10 mins each side.
    Allow to cool completely before serving.
