  • 300 grams Self Raising Flour, Or plain white flour or 1/2 of each
  • 1 tsp baking powder
  • 300 grams brown sugar, Or normal sugar
  • 500 grams trimmed and chopped rhubarb
  • 300 grams sour cream, Or plain yoghurt or milk
  • 60 grams Butter, Or vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 teaspoon cinnamon ground
  • 1 green apple, quartered
  • 1 orange zest

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Rhubarb Muffins
  1. Preheat oven to 180 degrees.
  2. Place rhubarb and apple into TM bowl 1 sec speed 6.
  3. Scrape out of the bowl & set aside. No need to clean the bowl.
  4. Add all the wet ingredients & sugar & process for 5 secs speed 5.
  5. Add flour & baking powder & rhubarb process 3 secs on speed 5 till just incorporated.
  6. Scrape mixture into paper muffins cases.
  7. Bake for 20 mins until golden & cooked through.

Tip

You can replace some or all of of the Rhubarb with apple.
