Walnut choc-chip cookies

Ingredients

50 piece(s)

Cowboy cookies

  • 55 g walnuts, pecans or almonds work well too
  • 120 g Butter, softened and chopped
  • 150 g brown sugar
  • 90 g White or raw sugar
  • 1 egg
  • 1 dash vanilla extract
  • 180 g plain flour
  • 1/2 tsp bicarbonate of soda
  • 80 g rolled oats
  • 190 g choc chips
  • 35 g Shredded coconut

Recipe's preparation

    How to:
  1. Preheat the oven to 190°C or 170 F/F.
    Grease and line 2-3 oven trays.

    1. Blitz walnuts sp4/3 secs and set aside.

    2. Cream butter and sugars, sp4/30secs. Scrape. Repeat.

    3. Add the egg, sp4/30 seconds. Scrape.

    4. Add the remaining ingredients, except for the oats, walnuts, coconut and choc chips, sp4/30 secs. Scrape.

    5. Add the walnuts, rolled oats, choc chips and coconut and blend
    sp 3/ Counter-clockwise operation /10 secs until just combined. You may need to use the spatula to assist.

    6. Drop tspns full onto the prepared sheets, and flatten slightly if you prefer a flatter cookie. (I didn't).

    7. Bake 20-25 minutes. They should be crunchy on the outside and chewy in the middle. Leave on the trays to firm before cooling on a wire rack.

    These are very tasty cookies. Had some choc chips that needed using up and blitzed some dark cooking chocolate and added this as well. Made a massive batch of 30 plus cookies.

    I have made these biscuits twice this week, a real favourite. I have frozen them when cooked & taste just a good even when frozen 😋

    Yummy,crispy outside and chewy inside.
    The coconut needs to be added in step 4 but it didn’t matter adding it earlier.
    Now I need to exercise willpower!
