White choc chip and Macadamia cookies

Ingredients

50 piece(s)

  • 125 grams unsalted butter, softened and cubed
  • 200 grams brown sugar
  • 2 teaspoons vanilla essence
  • 1 egg
  • 200 grams plain four
  • 1/2 teaspoon baking powder
  • 1 pinch of salt
  • 160 grams White Chocolate Chips
  • 130 grams macadamia nuts, roughly chopped

Recipe's preparation

  1. Preheat oven to 180 degrees celcius and line 2-3 baking trays with baking paper. Set aside.

    Place butter, sugar and vanilla essence into bowl and mix 1min/speed6

    with blades going on speed 3 add egg and mix until combined.

    add flour, baking powder and salt and mix 40 secs/speed 4

    add choc chips and macadamia nuts and combine 10 sec/speed 4 Counter-clockwise operation

    place spoonfuls of mixture onto trays, allowing room for spreading.

    Cook for 15 mins or until pale golden.

    Cool on tray for 5 mins before transferring onto wire rack to cool more.

Tip

Don't eat too many. these are so good! 

Store in an airtight container for a week if they last that long!

    I did find the brown sugar flavour quite strong, so would probably reduce that next time I make these.
    I also did 200g choc chips and approx 150g Macadamias and it wasnt too many! Delicious!

    These are yummy! I actually had to change the recipe quite a bit due to limited ingredients, so will post my recipe. I used dark chocolate, and used half butter half apple sauce rather than the full quantity of butter. I reduced sugar to almost half (100-110g) also and used coconut sugar instead and they are still delicious.

    Absolutely Delcious!!!!!

    I used my butterfly to mix all the ingredients then took it out to add the chocolate chips and macadamias. I only had dark choc chips so used these and still delicious!!! Will definitely be making again Love

  • Super more-ish! I didn't have

    Super more-ish! I didn't have any chocolate, so I made straight macadamia bikkies, and they were amazing. I reduced the bake time down to about 10-12 minutes because I like my biscuits softer.  I also cut them and put them in the freezer while the oven was preheating so they didn't spread too much.

    Hubby prefers them crunchy, but when I served them warm, there were no complaints, just compliments that it was crunchy on the outside and soft on the inner. Because it's just us two, I rolled the mix in baking paper and kept it in the fridge, baking on demand.  This definitely made them last a bit longer!!!

    Just made these and they are great with some changes. I used 100g of rapadura suagr as 200g would have been way too much. I put 50g less chocolate in and put in 30g cranberries.
