Ingredients

White chocolate and mango cookies

  • 150 grams Butter, Cut into pieces
  • 120 grams caster sugar
  • 120 grams brown sugar
  • 1/4 tsp salt
  • 340 grams plain flour
  • 2 tsp Vanilla Paste
  • 1 tsp bicarbonate of soda
  • 100 grams Dried Mango, See tips
  • 200 grams White Chocolate Chips
  • 1 egg

Recipe's preparation

  1. Preheat the oven at 170°.
  2. Add to mixing bowl butter, salt, egg, brown sugar, caster sugar, bicarbonate of soda, plain flour, and vanilla paste.

    Lid on...
  3. Mix 30 sec / speed 3.
  4. Add white chocolate chips and mango pieces, reserving about 20 g of each to sprinkle on top of the rolled cookie dough.
  5. Mix 30sec / reverse/ speed 2.
  6. Roll the dough into 50 g balls and arrange them on baking trays, leaving about 5 cm between each to allow for spreading. Top with a few extra white chocolate chips and mango pieces.
  7. Bake at 170°C for 10 mins, until lightly golden and just set in the centre. Leave to cool on the tray for 5 minutes before moving to a wire rack to cool fully.
  8. Enjoy.

Tip

I like the mango pieces that come in a box near the sultana's.



you could add a handful of crushed macadamia to give it a different flavour.
