Whole Orange Ginger and Cardamon Cake

Cake batter

  • 185 grams raw sugar
  • 125 grams Butter
  • 290 grams plain flour
  • 1 teaspoon Ground Cardamon powder
  • 1 teaspoon ground ginger/1 tsp fresh chopped ginger
  • 1 teaspoon baking soda
  • 2 eggs
  • 125 grams Boiling water
  • 60 grams plain yoghurt

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Describe the preparation steps of your recipe

  2. Mill Sugar 7 seconds speed 8, scrape down

    Add Raw Ginger if using it and washed whole orange cut into quarters Blend 5 seconds speed 8 , scrape down, Add softened butter and eggs blend 10 seconds speed 8, scrape down

    Add Flour, cardamon and gr ginger to bowl

    dissolve Baking soda in boiling water, stir then add yoghurt. Pour into TM bowl. Mix 5 secs speed 7. check if all mixed ok.

    Pour into lined and greased 20cm spring tin

    Bake at 160 degrees for approx 40 mins. test and take out when just done. Leave in tin and cover with teatowel. 

    Meanwhile make a sugar syrup with equal amounts of sugar and water in a saucepan. I use 125 grams (1/2 cup). Bring to rapid boil and reduce, add passionfruit pulp from 4 fruits then reduce till syrupy. Pour over cake while in tin. Leave for 10 mins then turn out ready to serve

    serve with more yoghurt
