- 110 g raw sugar, (milled into caster sugar)
- 6 Dates (pitted)
- 2 ripe bananas
- 110 g butter cubed or soft
- 1 level tsp vanilla essence
- 2 eggs
- 110 g plain flour
- 60 g wholewheat flour
- 1 heaped tsp bicarbonate of soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 25 g walnuts
- 2 eggs
Recipe is created for
Set oven to 180 degrees, (170 if fan forced)
Mill the raw sugar in to caster sugar - 5 seconds on speed 9
Add 6 dates and 25g walnuts 3 seconds speed 9 (lower if you like chunky fruit)
2 ripe banana's - mix for 3 seconds on speed 6
110g butter for 30seconds on speed 6
At 20 seconds - add 1 tsp vanilla essence and 2 eggs through the lid
Add all Dry Ingredients: Plain flour, Wholewheat flour, bicarb, cinnimon and salt and mix for 5 seconds on speed 6. Scrape down the sides of the bowl.
Mix for 2 minutes on Interval
Transfer to a lined loaf tin.
TIP: To retrieve the remaining mixture off the blades, return the TM bowl to TM, and wizz for 1 second on 9, then scrape the rest of the mixture into the tin.
Place in the middle of the oven and cook for 50 - 60 minutes, or when the skewer is removed clean.
Allow the loaf to cool in the tin for a while before transferring it onto a rack.
NOTE: if you mill the ingredients as suggested there will be a flavour of dates, banana and nuts, but not chunks. This is up to you. It should be spongy and light and delicate to taste.
