Yoghurt Cupcakes

  • 175g softened unsalted butter
  • 175g caster sugar
  • 3 eggs
  • 60g natural or greek yoghurt
  • 1tsp vanilla extract
  • 200g SR flour

Vanilla Icing

  • 200g icing sugar
  • 20g softened unsalted butter
  • 1 tsp vanilla extract
  • 2T Milk

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Yoghurt Cupcakes
  1. Preheat oven to 180 degrees. Line a muffin tray with 12 paper cases.

     

  2. Cream butter and sugar on speed 4 for 30 seconds. Scrape down sides and repeat if necessary.

     

  3. Add eggs, yoghurt and vanilla and mix on speed 3 for 10 seconds. Scrape down sides.

     

  4. Add SR flour and mix on speed 3 for 10 seconds.  Add a small amount of milk if too thick and mix again until combined.

     

  5. Divide mixture between cases and cook for 20 to 25 minutes, depending on your oven. Leave to cool in tin.

     

  6. Vanilla Icing
  7. Place all icing ingredients into bowl and blitz on speed 4 for 10 seconds.  Scrape down sides and repeat.

     

  8. Ice cupcakes once cool.

    I love these. I use coconut sugar which gives them more of a caramel flavour- I also add choc bits on occasions. the kids love them and very easy to make. Thanks for sharing.

    I'm glad you liked them.  The original recipe was from a birthday card my 10 year old daughter received earlier this year and we decided to have a go at converting it for the Thermomix.  It's one of our favourites!

    I made these gluten free (aldi flour) and they turned out delicious tmrc_emoticons.-) Mine had a lovely crunchy top and when eaten warm were soft and fluffy in the middle. AWESOME. Even when they cooled and had icing on them they were light and fluffy. The only thing I didn't like about this recipe was the ambiguous "add a little milk if the mix is too thick" If people have followed the recipe quantities then I would think everyones mix would be too thick....and ones idea of little amount might be 5g and for others might be 100g. So for those that wish to know I put in 60g of milk which next time I think I will still add more. These were a hit and will definitely be made again. I used white chocolate cream frosting on them though so I can't speak of the icing from this recipe. Thanks for sharing tmrc_emoticons.-)

    Made this the morning before heading camping, didn't have plain or greek yoghurt but had small tub of vallina which i used. They were so yummy even without icing. Will make again for sure  tmrc_emoticons.)
