  • 500 grams zucchini
  • 100 grams olive oil
  • 180 grams raw sugar
  • 2 teaspoon vanilla essense
  • 270 grams Self Raising Flour
  • 50 grams cocoa

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Method
  1.  Preheat oven to 180 degrees (160 fan force). 

    Grease and line a 26cm x 16cm slice tin.

  2. Chop zucchini roughly and place in Thermomix bowl.  Add oil, sugar and vanilla essence.  Mix Speed 7 for 15 seconds or until combined and smooth.  Scrape down sides of bowl. 

  3. Add flour and cocoa and mix speed 4 for 30 seconds.  Scrape down sides of bowl.  Continue mixing in 5 second intervals until fully combined. 

     

  4. Spread mixture in to prepared slice tin and bake for 15-20 minutes.  Test by intersiting a skewer.  It should come out relatively clean with just a little moisture. 

  5. Allow to cool in pan.  Once completely cooled, slice with a sharp knife.  Dust with a little icing sugar just before serving.

    Nice treat but not too sweet! I didn't use quite as much sugar so they weren't overly sweet but very nice chocolate flavour. They kept well in the freezer and defrost nicely, great for the lunchbox!

    Once main ingredients were all chopped up with zucchini, I was worried that is smelt a bit "green/leafy smell" - anyway carried on with the recipe trusting that it would all turn out okay, and I was PLEASANTLY suprised! Couldn't taste the zucchini at all! Such a quick and easy recipe.

    These are soooo yummy! I wish I didn't even tell hubby there was zucchini in the recipe! I am certain he would never have known! I did have to bake for an extra 20 minutes or so. I would love to know if you could use butter instead of olive oil? Has anyone tried this?

    Also, I froze half the batch for lunch snacks. Hopefully they defrost well!

    Made these for the first time and shared amongst children yesterday. A hit by everyone ! Sliced into squares and dusted with icing sugar. For me, the quanities of each ingredient was perfect ( not too sweet or rich). Thanks for taking the time to post this recipe. In my collection now.

    I'm impressed. Delicious and healthier than regular brownies. I cooked it much longer as per advice in previous comments. I also added some cinnamon, ginger and allspice as I was worried I would taste the olive oil.

    Made this today. I had to bake it for an extra 20 minutes as it wasn't cooked at each end. It's a nice, soft texture cake. Not as rich as other brownies I made, but this one does not use 200-300 grams of chocolate 😃
    For a healthier alternative, I give this recipe a thumbs up 👍

    The zucchini makes the brownie moist and you can't taste the vegetable content at all. The only change I made was swapping coconut oil for olive oil.

    Next time I'll use more sugar, and I'd have added nuts if my son's school wasn't nut free (darnit!) but the texture is fantastic and with the full amount of sugar the taste probably is too! (The one I made certainly didn't taste bad, the flavour was just not as intensely chocolatey as the brownies I buy. Though this one was a truckload healthier, so I'm still happy!).

    What a fabulous, simple & delicious recipe! I used half olive oil & half canola oil, also added chopped walnuts. Cooked an extra 10 mins. Topped with chocolate icing & walnuts. Will make this again & again. Great way to use up my zucchinis coming in at a rapid rate!

    Delicious! The texture is amazing. First time I made it I reduced the sugar to 110g & added in the olive oil I had in my cupboard. The taste of the olive oil was overpowering. I have made it again with sugar still reduced but now 120g & a light olive oil & it is soooo good. Even Miss 6 who hates zucchini loves it & insists on it in her lunch box & has conceded that she should give zucchini a chance at dinner time-yay! Now, if only her zucchini-hating father could be so easily swayed 😁

    Quick and easy!! I love being able to hide veggies in yummy recipes. I added about 10-15 minutes to the cooking time as mine just wasn't cooking at 160 fan forced. So moist and fluffy. Will be covering in chocolate icing (cause why not lol)

    I swapped the olive oil with coconut oil, reduced the amount of sugar and swapped cocoa with cacao and it is still fabulous! Moist, chocolately and with half a kilo of veg in it, super happy for the kids to enjoy it. Mr 8 Fusspot loved it and said, "Mum, you make the best cakes." So thank you very much for a great recipe that has the whole family happy!

    My kids love this brownie - even my veggie hating four year old (even once I told her it had zucchini in it). I tried a different variation today with relative success. I had a coeliac friend coming for afternoon tea, so I tried a gluten free version. Two tbsp of chia seeds added into the wet mixture and sat for five minutes. Then 380g of gluten free flour and five tsp of baking powder. The brownie was still yummy and flavoursome, not quite as moist as usual and maybe a touch chewy, but my friend approved and was grateful for my efforts.
