Ingredients
Creamy Chocolate Layer Cake
- 90 g Butter
- 200 g caster sugar
- 2 eggs
- 30 g cocoa powder
- 290 g self-raising flour
- 170 g Milk
- 60 g Boiling water
- 1/2 teaspoon bicarbonate of soda
- 600 thickened cream, ml

- Preheat oven to 180C/160C fan forced. Grease 2 x 20cm (base measurement) round cake pans.
- Add butter and sugar to bowl and turbo 8 times.
- Add eggs and mix for 10 seconds on speed 4.
- Add flour, cocoa powder and milk and mix for 5 seconds on speed 5.
- Add baking soda and water and mix for 5 seconds on speed 5.
- Pour into prepared pans; level surfaces. Bake for 35 minutes or until skewer inserted at centres comes out clean. Cool in pans for 5 minutes, then turn out, top side up, onto wire racks to cool.
- Once cakes have cooled insert butterfly into bowl. Add cream and whisk for 30-60 seconds until whipped.
- Using a large, sharp knife, split each cooled cake in half horizontally, to make 4 layers in total. Place a cake layer on a serving platterl top with a third of the cream. Repeat layering, finishing with a cake layer.. Cut into slices and serve.
