For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Weigh nuts into bowl and add salt.
Blend into a paste speed 10 for 2 minutes stopping at 1 minute to scrape down the bowl.
Check that the natural oils are coming out of the nuts and if it still looks dry then keep blending. The Thermomix may make loud screeching noises but this is normal - don't worry. Your bowl will also heat up whilst it is blending but this is normal too.
Taste it and add more salt if neccessary.
Store in a sterilized jar in the fridge.

Tip

NUMBER 1 TIP - keep your nuts in the fridge! This enables you to make this beautiful nut butter without any added oils. The oils are released from the cold nuts when blended. Keep blending until you see them. In older machines it may take up to 5 minutes - it's worth the wait. Your nuts will also last longer in the fridge.

If you want crunchy nut butter add a small handful of nuts to the bowl after you have taste tested it. Blend for a further 5-8 seconds on speed 6 to chop the nuts.

You can double this recipe and take half out at the end of this recipe then continue on to make chocolate nut butter. See my other recipe for Amazing Chocolate Nut Butter tmrc_emoticons.)
