  • 250 g Milk, (see Tips)
  • 1 pinch salt
  • 1 tbsp oil
  • 120 g plain flour
  • Butter, for frying

Recipe's preparation

  1. Place all ingredients into mixing bowl and blend 30 sec/speed 6.

  2. Allow mixture to stand for at least 20 minutes.

  3. Heat shallow crepe pan, butter the pan with a very small amount of butter and pour batter into hot pan. Never pour batter into unheated pan as it will stick. Turn over once edges start to lift.

  4. Repeat with remaining batter and serve warm.

Tip

Milk can be replaced with 250 g buttermilk.

    Great brekky crepe, doubled the recipe. I subbed a little of the milk (80-100mls) for water and they blended up well and cooked without sticking too badly surprisingly using only butter in stainless steel pan.
    Saved this recipe as it will be a Saturday morning standard! 😊😋

    Thanks for this recipe. it's great. I sometimes swap the oil for coconut oil for a subtle flavor difference. Kids always love it too. I double the batch for 4 people.

    Perfect if you like thin pancakes for breakky!

    My family prefer thin pancakes for breakfast, and a lot of the recipes use SR Flour to make them fluffy.  I added about 30g extra flour to this recipe to make it a litte thicker than crepes and it turned out to be a big hit.  Next time we'll need to double the recipe tmrc_emoticons.)

    You certainly can freeze cooked crepes. I would seperate them with baking paper, wrap tightly with plastic wrap or foil and then freeze for no longer than 3 weeks. To thaw remove from freezer and allow to thaw at room temperature or place into oven in foil wrapping and heat through until thawed.
