For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Pour 150g water into bowl. Add 1tsp yeast.
- Heat 2mins temp 37 speed 2
- Add 300g flour, 1tsp salt, 1/2tsp sugar, 1tsp bread improver, 7g oil.
- Mix for 15 seconds speed 3
- Knead for 5mins
- Place into thermomat until doubled in size (about an hour)
- Knock down and place into bread tin for a second rise (about an hour)
- Cook in oven for 30mins on 180

Tip
This dough is versatile. After the first prove I added 120g cheese and kneaded through to make a cheesey bread loaf.
I have also made a garlic, parsley, butter, cheese mix to brush through.
