Recipe's preparation

  1. Method (don't miss this step )

    Add water + sugar

    heat 2 minutes/ 37* / speed 2

    Add yeast Mix 10 seconds/ speed 3

    let sit for 5 minutes ( you should see a light foam = active yeast)

    2/ mix the initial knead add flour + salt mix 10 seconds/ speed 4

    knead 2 minutes/ dough mode

    3/ rest and second knead ( this is the upgrade) Let it rest in the bowl

    for 10 minutes lid on Knead for 2 minutes/ dough mode ( thi step helps gluten + better rise

    4/adjust hydration: dough should be Soft/Slightly Tacky ( not dry)

    if it feels tight add 10-120 g water knead for 30 seconds

    5/ First Rise (bulk fermentation)

    leave in bowl cover and place in a warm spot

    Rest until dough doubles in size usually 45-90 minutes ( don't follow the clock )

    6/ SHAPE

    turn out onto lightly floured bench shape into 1 x larges loaf or 2 smaller loaves ( handle carefully don't knock the air out)

    7/ Second rise

    Place on a tray with baking paper cover loosely rise for 30-45 minutes

    should puff up noticeable again

    SCORE

    cut 1-2 deep cuts into dough ( controls the expansion + improves height)

    BAKE

    with steam (important)

    pre heat oven , 220* at the start of baking put a tray of hot water in the oven or spray the oven with water

    BAKE

    220* for 10 minutes

    then 200* for 15-20 minutes

    should sound hollow when tapped
