Ingredients

  • 250 g warm water
  • 1 1/2 tsp Yeast
  • 2 tsp sugar
  • 450 g High Grade Flour, plus extra for dusting
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp bread improver, optional

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add warm water, yeast and sugar to mixing bowl and stir 2 min / 37°C / spd 1.5

    Let sit for 2 mins
  2. Add remaining ingredients and mix 5 sec / spd 4
    Then dough mode for 3 min
  3. Put into a greased thermoserver and leave to rise for approx 1hr until doubled in size.
  4. Grease a 20cm round cake tin. Gently punch the dough down and shape into a round loaf approx 16cm in diameter.
    Place in cake tin and using a sharp knife, make a criss cross pattern on top.
    Cover with lightly greased glad wrap and put in a warm place for approx 40min until doubled in size.
  5. Heat oven to 200°C
    Once bread has risen, remove gladwrap, sprinkle top of dough with flour and bake 30-35 mins until the loaf is golden brown and sounds hollow when you tap the bottom of the loaf.

    Turn out onto a cooling rack before slicing.
