  • 25 grams milk powder
  • 350 grams water
  • 30 grams oil, rice bran, macadamia
  • 1 tablespoon dried yeast
  • 20 grams sugar
  • 450 grams bakers flour
  • 1/4 teaspoon Bi Carb Soda
  • 1.5 teaspoons salt
  • 1 tablespoon cornmeal (polenta), to sprinkle in the tin and over the top of the loaf.

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Preparation
  1. 1. Measure the water, milk and oil into the Closed lid.

    2. Set to 60C/ 4mins / sp2

    3. Measure in the remaining ingredients.

    4. Blend at sp 5 / 45secs-1min.

    The mixture will be quite soft.

    5. Grease a small loaf tin (mine measures 21cm x 23cm x 10.5cm) and sprinkle with the polenta. This is the only proofing this loaf requires.

    6. Scoop mixture into the tin, cover and leave to rise (covered) until the mixture crowns about 5mm above the surface of the tin. This can take up to an hour or more.

    7. When the dough is nearly ready, preheat your oven to 190C.

    8. Sprinkle the top of your loaf with extra Polenta if desired.

    9. Bake for 25 minutes or until cooked when tested.

    10 Remove from pan immediately and cool on a wire rack.

Tip

*If you don't have milk powder, use 150g water and 100g milk.*

Please note that there is only one rise in this recipe.

It is the best toast bread ever...but not so good for fresh sandwiches due to it's texture, which is exactly like English muffins...

Try it with butter and jam, honey...Mmm..

    I got confused. Do i only use 250ml liquid if not using powdered milk. It was a soft dough but not wet like if id used the 350ml water. Has risen nicely but judt checking

    This is the best!!! I was going to make english muffins seperately until I seen this. This is it!! so so good, easy to make, easy to slice, even easier to eat! made a loaf yesterday and theres 2 slices left. making two more loaves now!! thank you!!

    I line my bread old bread pans with baking paper. Nothing sticks then, and so easy to remove from the pans after it is cooked. My new bread pans are non stick, much better!

    I didn't have bakers flour so I used plain flour. Texture was finer than regular muffins but when toasted it was just the same taste. Thank you!
