Ingredients

GF spiced fruit loaf

  • 550 g gluten free flour
  • 100 g Soft brown sugar
  • 5 tsp dried instant yeast
  • 1 level tbsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1 1/2 tsp ground ginger
  • 1 1/2 tsp ground nutmeg
  • 1 tsp salt
  • 350 g Milk
  • 100 g Butter
  • 1 tsp apple cider vinegar
  • 1 egg
  • 300 g dried fruit mixed

Recipe's preparation

    Step 1
  1. Place 350g milk , 100g brown sugar and 5 tsp dried active yeast into mixing bowl. Then mix 3 min/37°C/speed 2
  2. Grease Loaf tin and line base with baking paper and set aside
  3. Step 2
  4. Add 550g Gluten free flour, 1 Tbsp cinnamon, 1/2 tsp ground cloves, 1 1/2 tsp ground ginger, 1 1/2 tsp ground nutmeg, 1 tsp salt, 1 tsp apple cider vinegar, 1 egg, 100g butter, then mix 20 sec/speed 3,
  5. Step 3
  6. Add dried fruit and use dough mode to knead for 8 min.
  7. Mixture will still be quite wet, pour into prepared loaf tin and leave to prove in warm place for 1 hour or until doubled.
  8. Step 4
  9. Towards end of proving time, preheat oven to 180 deg C.
    Bake for 1 hour - or until cooked through
  10. Step 5
  11. Leave in tin for 5 min then place on wire rack. Serve warm with butter.

Tip

Depending on size of loaf tin, baking times may need to be adjusted. If only using dried fruit with no peel, reduce amount of sugar added at beginning of recipe.
It can be toasted in toaster.
If freezing - slice up first.
