  • 2 eggs
  • 120 mls --- Coconut oil (or olive oil), 125 mls
  • 80 mls --- Maple syrup
  • 50 mls --- Greek yoghurt
  • 2-3 Bananas (medium)
  • 1 and 1/3 cup Whole Wheat Flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup Choc chips or slivered almonds or similar

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Put wet ingredients in bowl (eggs, coconut oil, maple syrup, yoghurt, vanilla and 2-3 bananas), 10 seconds on 5.
    2. Add cinnamon (optional), baking soda and salt, 10 seconds on 5.
    3. Add flour slowly over 20 seconds, speed 3. If mixture not smooth, blend for another 10 seconds on 3.
    4. Pour into loaf tin, bake in preheated oven at 180 degrees 50-55 mins or until inserted toothpick comes out clean. Cool for 10 minutes, slice and enjoy.

Tip

I added blueberries and it was yummy. I also used slivered almonds.

    Terrible. Flat as a tack, didn't rise at all and very oily. Very disappointed. Recipe has been converted to suit TMX from https://gimmedelicious.com/healthy-moist-banana-bread/ that provides all the ingredients (and options) in cup measurements.

    Beautiful. We love it.
    Vanilla wasn’t in the ingredients so I added 1tsp. Used spelt flour. (170gm) and added 1tsp of cinnamon.
    added choc chips on top. Yum.

    Really delicious and super moist. I added 1tsp cinnamon (couldn't find the amount in the recipe) and forgot to weigh the flour out in grams to make it even easier.
