Mad's Grain Bread Loaf

  • 440 grams flour, I use special white type 00 flour
  • 220 grams water, cold
  • 20 grams fresh yeast, OR
  • 2 teaspoons dried yeast (7gm), 7gram sachet
  • 20 grams olive oil
  • 2 teaspoon sugar
  • 1 teaspoon salt
  • 2 teaspoons bread improver

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. 1. Place grains and seed mix into a bowl and add boiling water, set aside for at least 15 minutes.

    2. Place yeast and water into mixing bowl and mix on speed 1 for 3 minutes at 37°C to activate yeast.

    3. Whilst turning, add the oil, sugar, salt and bread improver into the mixing bowl.

    4. Add the flour to the mixing bowl and combine ingredients on speed 4 for 10 seconds.

    5. Add the grains and turn on dough mode and knead for 5 minutes

    6. Pull dough out of bowl once finished and place on to Thermomat to prove, cover and let double its size (about 30-40 minutes)

    7. Preheat oven to 180°C and lightly grease Thermomix bread tin

    8. Knock down dough and shape into something that will fit into the bread tin. Put dough into tin and ightly spray top of dough.

    9. Once bread has almost reached the top, put lid on the loaf tin and leave for another 10 minutes.

    10. Bake in over for 30 minutes, take out and empty on to cooling rack.

Tip

You can really use any type of bakers flour, I buy 12kg bags of Centurion Special White '00' Flour, I use this for my bread, cakes, pasta, cookies, pizza, everything.

For the seed / grain mix, I use crushed wheat, sesame, barley, sunflower cornels, linseed, poppy seed and mixed chia seeds. This combination is a matter of preference and you can use any that you like.

    Did I miss when you add the grains that have been soaking in the boiling water?
    I mixed them in later, the bread is fantastic but the grains were not mixed through only on the outside of the loaf.

    When do you add them or are they in the bowl first?

    Iv tried the thermomumma bread and didn't like it. This is the only bread I make now. I use pepita, sunflower seeds and chia seeds.
