Medieval herb bread

  • 5 tsp Yeast Dried
  • 400 gram warm water
  • 6 eggs
  • 1.25 teaspoon salt
  • 6 tablespoon Grapeseed (or other neutral) oil
  • 1.25 teaspoon rosemary
  • 10 gram parsley
  • 1000 gram bakers flour
  • 1 Egg for Glaze

Recipe's preparation

    Method
  1. Chop herbs 8 sec/speed 7; set aside

    Place warm water and yeast into bowl; heat 1 min/37 deg/speed 1

    Add flour, salt, herbs, eggs and oil and mix 10 sec/speed 6

    Knead 3 min/closed lid position/interval speed

    Turn out into oiled bowl or onto mat to prove for 1.5hrs

    Shape into 2 loaves of your desire

    Cover loosely and cover for another 45 mins

    Brush with egg and bake for 50 mins/190 deg

This recipe can be halved quite easily to make one loaf
