Pao De Queijo - Mini Brazilian Cheesy Bread Rolls

Ingredients

Dough

  • 500 grams Tapioca Flour (arrowroot)
  • 200 grams Milk
  • 75 grams Oil (I used sunflower)
  • 11/2 tspn salt
  • 250 grams parmesan grated
  • 2 eggs

Recipe's preparation

  1. Pre-heat oven to 180°C fan forced for 10mins.  

    Add Milk + Oil + Salt to the bowl 3mins | 100°C | speed 2 or until boiling. Pour liquid into seperate jug and set aside. Allow to drop back to under 60°C.

    Then add flour to bowl and set 6mins | Dough mode (Knead) - once going, add the milky/oil liquid to the flour slowly and pour until it just starts to come together like dough. Then with-in the 6 mins add each egg (1 at a time) and when there is still a couple of mins to go, add cheese. If the dough is too dry, add some of left over milk/oil mixture. 

    With well greased hands (butter works really well) take roughly a heaped tspn of mixture in your hands to form a ball and place on a baking tray lined with baking paper. If you don't use baking paper - oil the tray and dust with tapioca flour. 

    Bake in your pre-heated oven for roughly 25mins but check at 20mins or until puffed and just golden, if you over cook them they won't be soft and gooey-cheesy when you pull them apart.

    That is the original receipe, the same i learned from  my mother. Delicious! i added a bit more milk though!
