Rye Bread




  • 100 g bakers flour
  • 100 g rye flour
  • 6 g Yeast
  • 140 g water

  • 10 g salt
  • 10 g dried instant yeast

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Making the Starter.
  1. 1.) Place a bowl on top of your bowl and select your scale
  2. 2.) Weight all your ingredients into the bowl and mix together
  3. 3.) Leave in a warm place overnight
  4. Making the Dough
  5. Select Scales in the Mode selection and weight out the yeast & Water.
    Then 37c speed 2 for 2 minutes
  6. Now weight out both flours into the bowl and the salt.
    Select Dough mode for 5 mins.
  7. Now if you have a Silcone mat place dough on the mat and cover for 1hr.
  8. Meanwhile clean and dry bowl and also flour Bread baskets
  9. Place a bowl on the bowl and select scales
  10. Weight out 450g Loaves and roll into a round loaf.
  11. Now gently place into the bread basket withthe bottom on top and spray with oil.
  12. Now gently cover with cling film around the dough.
  13. Now place in the fridge overnight.
  14. Baking the Loaf
  15. Now pre heat the oven at 250c
  16. Place the baking tray in the oven to heat up, also placing a baking tray with 1.5 of water in the bottom of the oven to create stream
  17. Once the oven is hot remove tray and gently tip dough into tray
  18. Spray with water and using a strive, cover with flour
  19. Using a bread scalpel, cut the loaf to how you would like the marking to look
  20. Now put bread into oven and spray while closing the door
  21. cook for 5 mins, then spray again and turning oven temp to 230c
  22. bake for another 10 minutes and then turn loaf
  23. cook for another 5 minutes
  24. remove from oven and allow to cool on a cooling rack
