SOFT BREAD ROLLS

Bread Dough

  • 460 grams Luke Warm Water
  • 60 grams Dry Milk Powder
  • 20 grams dried yeast
  • 10 grams salt
  • 100 grams Butter
  • 1 egg
  • 750 grams plain four
  • 1 teaspoon bread improver

Recipe's preparation

  1. Place luke warm water & milk powder into Closed lid. 5 secs on speed 4

    Add yeast, butter, egg, 300g flour & salt  5 secs speed 6, 2 mins Closed lidDough mode

    Add 300g flour & bread improver. Mix 5 secs speed 6,  2 mins Closed lidDough mode

    Add 150g flour 5 secs speed 6, 2 mins Closed lidDough mode

    Dough should not be soft, not too sticky & not stiff.

     

    Lightly spray a large bowl with oil, place dough into bowl, give dough a light spray with oil & cover with glad wrap.

    Place bowl in a warm place, until dough doubles in size (30 - 45 minutes)

     

    Place dough on a flat floured surface & divide in half, roll into a circle. Using a pizza cutter, cut the dough into 16 even slices.

    Roll each slice, starting at wide end & tuck the small point underneath. (or shape into long or round rolls...good for hotdog rolls)

    Place rolls on tray, lined with baking paper. Repeat with other half.

    Let the rolls rise for 1 to 1 & 1/2 hours until doubled in size.

    Bake for 15 - 20 minutes at 180 C

     

    Brush with melted butter ENJOY!!

    I havent tried the recipe without the milk powder but if I was going to I would subsitute it for milk & omit the same amount of water.

    These do make a lovely soft, fluffy bread roll. Very nice recipe. I will definitely make again, however, next time I won't roll them up as suggested as mine came out looking a bit croissant like. I will just shape the dough into hotdog or round rolls and see how that goes. Thanks

    Very nice rolls. I made 8 very large rolls, and baked extra 5 or so minutes (my old gas oven isn't very hot either) and they were delicious. I didn't have enough time to allow to rise 1 to 1.5hrs after shaping into rolls, I think they got about 30-40 mins but still rose well and were light and fluffy once cooked. Yum!

    You can buy bread improver in your supermarket in the baking section. usually near the yeast. It makes your bread fluffier. You can also use ascorbic acid powder.

    Made these today, didn't have enough time before kinder & school pick up to let the rise for the 1 - 1 1/2 hrs as in the recipe, only did about 40 mins but they cooked beautifully and tasted fantastic...the family loved them
