Soft Potato Doughnuts @levi_nathania

  • 1200 grams Drinking water
  • 100 grams potatoes, (peeled and cut into 4)
  • 200 grams High Protein Flour
  • 50 grams all purpose flour
  • 2 pieces egg yolks
  • 4 grams dried instant yeast
  • 50 grams white sugar
  • 90 grams cold fresh milk
  • 30 grams margarine / butter, (can also be mixed)
  • 1 gram salt

Recipe's preparation

  1. Pour 1200 gr drinking water, and put on simmering basket inside the mixing bowl and place the 100 gr potatoes in it. Cook 18min / Varoma / sp. spoon
  2. Discard the water, toss the cooked potatoes to the bottom of the mixing bowl and mash it 5 sec / sp.5
  3. Cool the potatoes down in the mixing bowl for a while.
  4. After the mashed potato isn't hot anymore, add 200 gr High Protein Flour, 50 gr All Purpose Flour, 2 pc Egg Yolk, 4 gr instant yeast, 50 gr white sugar, 90 gr cold fresh milk. Knead the dough 3 min
  5. Add 30 gr margarine / butter, 1 gr salt. Knead the dough 1:30 min
  6. Measure the dough and divide equally into 10. Round them and firmly flatten them. Rest them until they expand in the next 20 minutes. Then create the holes and flip them to the other sides. Rest them again until they become fluffy and light. Then fry them

Do not flip the doughnuts back and forth when you fry them for best result.
