Ingredients

Whole Wheat & Chia Seed Loaf

  • 200 g Whole wheat grain
  • 310 g lukewarm water
  • 1 sachet dried instant yeast, (Tandaco)
  • 1 tsp salt
  • 60 g chia seeds
  • 300 g baker's flour
  • 20 g olive oil
  • some poppy seeds, to sprinkle on top

Recipe's preparation

    Whole Wheat & Chia Seed Loaf
  1. Place whole wheat grain into mixing bowl and mill 1.5 min/SP 9

    Add water, then yeast, salt, chia seeds, flour and oil

    Mix for 6 sec/SP 6

    Knead 2.5 min/Closed lid/Dough mode

    Turn dough onto Thermomat and knead to form a ball.

    Wrap loosely in Thermomat, allowing room to expand, and set aside to rise in a warm spot for 30 minutes.

    Once dough has risen, knead dough again and allow to rise for another 30 minutes

    Place onto baking tray lined with baking paper

    Brush top with water and cut slits along the top of the loaf

    Sprinkle with poppy seeds

    Place into a cold oven and bake at 180 degrees C for 25-30 minutes, or until the loaf is golden and sounds hollow when you tap it on the bottom

Tip

You can shape the loaf into rolls if you'd prefer

As there are no preservatives, it will not be as fresh the next day so I recommend you slice the loaf the day it was made and freeze the slices to retain their softness or for toasting

This loaf is fairly dense but delicious, especially straight out of the oven, slathered in butter and honey... mmmm
