Apple and Raspberry Sponge Pudding

  • 550 grams apples, Peeled, cored and diced
  • 150 grams raspberries, Fresh or frozen
  • 220 grams caster sugar
  • 3 large eggs, Separated
  • 1/2 level teaspoon vanilla
  • 90 grams Self Raising Flour

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Poached apple
  1. Describe the preparation steps of your recipe

  2. Put 600-800 mls water into Thermomix bowl

  3. Place cooked Apple in a casserole dish or cake pan at 6-8 cm deep.  Sprinkle raspberries on top of apples. Pour over Apple juice and sprinkle with 1/2 the sugar.  Set aside

  4. Place peeled and cored apples into steamer basket and cook for 15 minutes on Veroma at speed 1

  5. Sponge mix
  6. In a clean dry bowl, mill the rest of the sugar for 10 seconds at speed 10.  Transfer to a dry bowl and set aside

  7. In a clean dry bowl, insert butterfly whisk.  Place egg whites in bowl, and whisk without measuring cup for 3 minutes at speed three until forms firm peaks.

  8. Set to mix 3 minutes at speed three without measuring cup, and very slowly add reserved milled sugar

  9. Set to stir Gentle stir setting for 2 minutes and add egg yolks one at a time.  Scrape down sides and set to stir for 30 seconds

  10. Remove butterfly whisk

  11. Add vanilla and mix for 3 seconds at speed 3

  12. Use spatula to scrape down sides

  13. Add flour to bowl and mix at speed 3 for 5 seconds.  Scrape down sides and Mix for another 3 sec if necessary

  14. Pour sponge mix over apples and Raspberries and spread evenly

  15. Bake at 180C for 20-30 minutes

  16. Serve with cream or custard

    Very tasty, I had to make sure I didn't overcook the sponge as it could easily dry out and end up like cake. I used half the sugar overall. I used 200g frozen raspberries. Thanks for posting. Smile
