Apricot & Almond Bites

Ingredients

Bites

  • 300 g dried apricots
  • 100 g dried cranberries
  • 3 tbsp Shredded coconut
  • 1 tbsp Pepita Seeds (pumpkin)
  • 1 tbsp sunflower seeds
  • 250 g almonds
  • 1 tbsp honey

Recipe's preparation

  1. Add all ingredients EXCEPT the Honey into the Mixing Bowl.

     

    Mix on Speed 6 for 30 seconds or untill ingredients are moist and starting to stick together when pinched.

     

    Add Honey and mix for a further 15 seconds on Speed 5.

     

    Pour into a large bowl and roll spoonfuls of mixture into balls.

     

    Can be refridgerated for upto two weeks but are almost always eaten before then. Otherwise they can be frozen for up to three months.

    Made these yesterday. I used 150g almonds and 100g rolled oats (ran out of almonds). I did find them a bit dry to roll so added a tablespoon of coconut oil. They are great and a hit with both me and the kids.
