Banana Pancakes with Lemon

Batter

  • 2 large bananas
  • 1 tablespoon lemon juice
  • 20 g rolled oats
  • pinch salt
  • 65 g plain flour
  • 1 teaspoon baking powder
  • 2 tablespoon caster sugar
  • 1 egg or egg replacement
  • 80 g Milk or dairy free substitute
  • 45 g margarine
  • 2 lemons
  • 2 tablespoon cinnamon sugar

Recipe's preparation

  1. Mash banana in a bowl and stir in lemon juice.

  2. Place rolled oats in Thermomix bowl and process 20 secs/speed 9.

  3. Add salt, flour, baking powder, sugar, egg, milk and margarine. Mix 20 secs/speed 4.

  4. Add banana mix and mix a further 20 secs/speed 4. Scrape into a bowl and sit for 10 minutes.

  5. Spoon 2 tablespoons at a time into pan and cook over menu heat for 1 minute and then turn over. 

  6. Serve with lemon juice, cinnamon sugar and slices of banana.

Tip

As this has banana it should be effective to switch out the egg for flaxseed. Thereby making the recipe vegan.
