  • 885 grams Milk
  • 8 egg yolks
  • 6 level tablespoons honey
  • 2 teaspoons cornflour
  • 200 grams dark chocolate
  • 2 level teaspoons vanilla extract
  • 250 grams Pouring Cream

Recipe's preparation

  1. Add milk to bowl 6 mins, 100 degrees, speed 1. Heat until just boiling. Time will vary depending on temperature of raw ingredients.

  2. Add egg yolks, honey, cornflour, cocolate (broken into peices) and vanilla extract. 7 mins, 95 degrees, speed 2 (add more time if needed). Heat until thickened slightly and coats the back of a spoon. Increase sweetness to taste by adding more honey.

  3. Cool mixture slightly then poor into ice cube trays. Freeze.

  4. Remove mixture from ice-cube trays and blitz in 2 batches, adding half the quantity of cream to each batch. Blitz speed 9 until the desired consistency. Add more or less cream to taste.
