Doughnuts

  • 50 g caster sugar
  • 3 teaspoon dried instant yeast
  • Rind of 1 Lemon
  • pinch salt
  • 250 g Milk
  • 100 g Butter
  • 3 egg yolks
  • 1 teaspoon vanilla essence
  • 400 g bakers flour or plain flour

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Doughnuts
  1. Add 250ml milk & 100g butter to mixing bowl and mix 2 minutes/60 degrees/speed 1.5 

  2. Add all remaining doughnut ingredients to mixing bowl and knead for 2 minutes/Dough mode

  3. Remove dough from TM bowl and place in an oiled bowl dough will be very sticky so you may want to flour your hands, cover with gladwrap and set aside for 1.5 hours or until doubled in size. 

  4. Flour surface and knock back dough. Place dough back into the TM bowl and knead for a further 2 minutes/Dough mode

  5. Transfer dough onto floured surface again it will be very sticky so flour your hands and sprinkle a bit of flour ontop of the dough. Roll out dough 1cm thick and cut out heart shapes using cookie cutter. place cut outs on baking tray lined with baking paper. Set adise for 30 minutes to prove.

  6. Heat 1.5L of canola oil in a sauce pan on a medium to high heat and fry each doughnut until golden brown on each side approx 30 seconds. Remove from oil and roll in caster sugar immediately.

  7. Custard
  8. Add ingredients to TM bowl as directed following the automated custard recipe for thick consistency (TM5). Once custard has cooled place in a piping bag and pipe into the inside of the doughnuts.

Tip

If dough is too sticky to work with just add small amounts of plain flour.
