Fig & Date Steamed Puddings

  • 160 g dried figs
  • 85 g dates
  • 80 g brown sugar
  • 30 g Butter or Olivani
  • 250 g Boiling water
  • 1/2 tsp baking soda
  • 140 g Gluten Free Baking Mix
  • 1 1/2 tsp baking powder
  • 1 tsp mixed spice
  • 1 egg
  • Cream to serve

Recipe's preparation

  1. Put figs, dates, brown sugar, butter, in jug. Chop for 6 secs / speed 6
  2. Add boiling water, and cook for 6 min / 100C / Speed 1
  3. Add baking soda, mix for 3 sec / speed 2

    Leave to cool for 15 minutes
  4. (Put your kettle on to boil, so that its ready for later)
    Meanwhile, grease the silicone muffin molds and lay out in Varoma dish and tray, as shown in the picture (7 in the dish and 10 in the tray).
  5. Chop mixture 4 sec / speed 4
  6. Add the Gluten Free Baking Mix, Mixed Spice, and Egg.
    Mix for 8 secs / Speed 3
  7. Pour mixture into molds (half fill only! - then top up evenly to use up all the mixture).
  8. Place a tea-towel under the varoma lid, on top of puddings.
    Put 500g of boiling water into the TM Jug. Place Varoma on top and steam for 20 mins / Varoma temp / Speed 3.
  9. Allow to cool before removing from molds.

    SERVE with cream, custard or caramel sauce. Brandy cream.

Tip

Instead of shop bought Gluten Free Baking mix, this following combination (and quantity) works for this recipe:
80g Basmati Rice, make into flour, then add 30g Maize cornflour and 1 tsp baking powder.
