Ingredients

  • Base:
  • 250 g macadamia nuts
  • 100 g dates
  • 45 g desiccated coconut
  • Filling:
  • 400 g cashews soaked for at least 1 hour then drained
  • juice and pulp of 2 large lemons
  • 50 g Agave nectar or Maple syrup
  • 120 gcoconut oil
  • 1 tsp vanilla bean, extract
  • Pinch sea salt
  • 100 g water
  • 1-2 punnets fresh strawberries or 150 g frozen berries
  • or flesh of 2 mango, es or 150 g frozen cheeks

Recipe's preparation

  1. Place all base ingredients into TM bowl and blend for 30-40 seconds on speed 6 until well combined and forming a moist dough. Press into 20cm spring form cake tin and place in freezer.

    Place all filling ingredients into TM bowl and blend together until smooth and creamy for 1 minute on speed 7.

    Pour on top of base and set in the freezer over night.

    Remove from cake tin and decorate with additional fruit and nuts of choice. Allow cheesecake to sit for 30 minutes in fridge prior to serving to soften slightly.

    Tasted great! I could only get dried dates & they worked just fine.

    I made this for the gluten/dairy free aspect, so has anyone tried baking the base? When I took it out of the freezer the base wilted quite quickly but the filling stayed frozen. Was still a huge hit at the party for both the people with food intolerances & everyone else.

    Firstly coconut oil is a medium chain fat not a long chain so it is healthy. There is new research regarding agave syrup that it is no better for you than sugar as it is highly processed from the root of the plant. Real agave as made by the Mexicans is extracted from the leaf and has a very strong taste which is not like by many people. If you wish to use a natural sweetener use the maple syrup, dates or coconut sugar which is low gi.
