Gluten Free Nut free Sugar Free Egg Free Diary Free Vanilla Cakes (great for lunch box)

Ingredients

12 portion(s)

  • 180g Nuttelex, softened
  • 1tsp vanilla extract
  • 100g Natvia or sweetener of choice, (or 220g sugar)
  • 3 portions No Egg Replacer, (ie 3 tsp egg replacer with 6 TB water)
  • 300g Gluten Free SR Flour
  • 160g rice milk (or preferred milk)
  • 1tbsp vinegar

Recipe's preparation

    Makes 12 cakes

  2. 1. Preheat oven 170ºC/180ºC


    2. Mix all ingredient in the TM bowl. Mix for 1min/Speed 5.
    3. Pour out batter into greased pan (I used square) (or use muffin tin for round cakes)
    4. Bake for 15 mins or until skewer comes out clean. 


    5. Leave plain or Top with icing of your choice. I used Natvia Icing Mix to keep as sugar free following directions on box for half batch of icing.

Tip


You can make this into cupcakes or mini cakes. I made this into 12 little sqare cakes as it is easy to freeze for school lunches. For the 12 mini cakes - adjust time to only 15 mins baking.
