- 1-2 packages Tennis Biscuits, from South African section in most supermarkets. malt o' milk can also be used
- 1 cinnamon quill
- 800 g Milk
- 4 eggs
- 40 g flour
- 40 g cornflour
- 200 g sugar
- 1 tbsp vanilla extract
- 30 g Butter
- cinnamon, for dusting

Recipe's preparation
Line a large square or rectangular dish with whole biscuits. I use a 25 x 25cm glass dish but use whatever you have.
Heat 400g of the milk & the cinnamon quill 10min / 90degrees / "Counter-clockwise operation" / speed 1. Remove the cinnamon & allow the milk to cool for 10min.
Add eggs, flour, cornflour & sugar. Blend 7seconds / speed 7.
Add vanilla, butter, & remaining milk & cook 12-14min / 90degrees / speed 4, until thick & glossy.
Carefully spoon mixture over biscuits so that they stay in place. smooth with a spoon or spatula & then sprinkle with ground cinnamon.
Cool slightly then store in the fridge for at least 2 hours before serving.
