No Fail Rum Balls

  • 9 Weetbix, (Can use GF weetbix)
  • 2 level tbsp cacao powder, raw
  • 175 grams sultanas
  • 30 grams Rum, (Can use spiced)
  • 1 can condensed milk, (Can use light or coconut)
  • 35 grams shredded coconut, (Can use desiccated)

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Place weetbix and cacao into bowl and crush 5sec sp7. Set aside in another bowl.
  2. Without washing the bowl add sultanas and turbo 1sec 3-4 times till chopped to your liking.
  3. Add all other ingredients including weetbix/cacao and mix sp2 until combined.
  4. Place your thermie bowl into the fridge to chill for at least 1 hour.
  5. Roll into bite size ball then roll through extra coconut.

Tip

Use a small cookie scoop to make uniform balls.

Gluten Free option
GF weetbix can be used.

Change up the kind of rum used for different flavours.

Dairy Free option
Use coconut condensed milk

Extra tip:
I only keep shredded coconut in my pantry. Beware of 'moist' coconut that has added sugar. If you want a finer coconut for adding or rolling do a quick blitz of your shredded coconut before starting the recipe or if you don't realise till you are rolling, grab your second bowl and blitz up what you need.
