Limoncello and Lime Tea Cake

  • 1 cup of sour cream
  • 2 eggs
  • 3/4 Cup of Caster sugar
  • 1/4 cup of vegetable oil
  • 1 teaspoon vanilla extract
  • 3 level tablespoons of limoncello
  • Zest of one lime
  • 2 cups of plain flour
  • 2 level teaspoons of baking powder
  • 1/2 level teaspoon of baking soda/ bicarbonate of soda
  • 1/2 level teaspoon of salt, this is needed to meld the flavours
  • Glaze
  • 1 1/2 Cups of icing sugar
  • 3 level tablespoon of limoncello

Recipe's preparation

  1. Add sour cream, eggs, sugar, vegetable oil, vanilla, limoncello, and zest to the bowl - mix 1.30 minutes speed 5

    Add flour, baking powder, and bicarb/baking soda  mix 30 seconds speed 4 - do not over mix, scrape bowl and stir gently

    Pour into an oiled Brunt tin/pan and cook 160 deg for aound 35-40 or untill skewer comes out clean - if fan forced set the fan on low

    Rest the cake on a rack for 10 minutes before turning out of the pan and  let it cool


    Mix the limoncello and icing sugar and drizzle over cake when cool

    Serve and enjoy
