- 100 g sugar
- 1 lime, Juice of
- 180 g mango, Frozen120g
- 120 g coconut cream
- 1 egg white, Optional
- 500-700 g ice cubes
Recipe's preparation
Place sugar into mixing bowl and mill 10sec/speed 9
Add lime juice, mango and coconut cream, and egg white if using.
Add 350g ice and blend 20sec/speed 10 (turning speed gradually from 1 to 10)
taste test (yum). Add more mango or lime if needed. If adding more mango reset scales put mango in and then make ice up to 350g. Blend for a further 1 min/speed 10 using spatula to help move it around.

Amy: try blending your ice first on it's own and setting aside in your freezer then adding in when recipe says. Will be a much finer smoother texture with no icy lumps.

Really delicious however I'm not sure if i did something wrong as i struggled to get all the ice to blend. The sorbet i scraped from around the ice cubes that wouldn't blend was really nice.

Love this recipe! Only had 1 tray of ice cubes, and replaced coconut cream with a small tub of coconut yoghurt. It was creamy and delicious.

I reduced the sugar content
I reduced the sugar content to 40g, added another 100g mango and 250g ice cubes (on top of the initial 350g). I had to blend the mixture quite a bit longer to break and blend the ice cubes into the mixture. It is delicious! Thank you for sharing.
