Meghli (Lebanese rice pudding)

Ingredients

Rice pudding

  • 1600 grams water
  • 180 grams rice flour
  • 180 grams sugar
  • 1 tablespoon ground caraway
  • 1 tablespoon ground cinnamon

Topping

  • 40 grams shredded/dessicated coconut
  • 40 grams pine nuts
  • 40 grams blanched almonds
  • 40 grams shelled pistachios
  • 40 grams sultanas
  • 20 grams sugared chickpeas, (optional)

Recipe's preparation

    Rice pudding
  1. Insert butterfly whisk.

  2. Place all rice pudding ingredients into your bowl.

  3. Cook 10min/110deg/speed 1. Increase cooking time by 2 mins if you prefer it thicker.

  4. Pour into individual servings to set.

  5. Top with remaining ingredients and eat.

  6. Cover any left over pudding with cling wrap and refrigerate.

Tip

1. If you prefer to mill your own rice do this before adding meghli ingredients for 1min/speed 9 and increase cooking time to 20min. Increase by 5 mins if required.

2. You may prefer to pre mix the topping until such time as its ready to be eaten. Then its as simple as removing your pudding from the fridge and sprinkling with topping to serve. This saves the topping from going soggy.
