Paleo Coconut Pancakes

Ingredients

Pancake Mix

  • 4 organic eggs
  • 120 grams coconut cream
  • 120 grams water
  • 55 grams Organic coconut flour
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon sea or rock salt
  • 1 teaspoon bicarbonate soda, (Baking Soda)
  • 1 teaspoon cinnamon
  • coconut oil, For frying

Recipe's preparation

  1. Place all ingredients in the bowl.

  2. Mix on speed 5 for 3 seconds.

  3. Scrape down the sides of the bowl and mix again on speed 5 for 3 seconds.

  4. Heat coconut oil in the frying pan on a low heat.

  5. Drop dessert spoons of mixture into the frypan and flatten with a spatula.

  6. Turn pancakes over gently when you see the edges starting to cook and remove from the pan when golden on both sides.
