Raw Gingerbread Cookie Dough Balls - GAPS, Paleo, Vegan option, Grain, Gluten & Dairy Free

Ingredients

20 piece(s)

Raw Gingerbread Cookie Dough

  • 200 g medjool dates, pitted
  • 200 g walnuts, raw or activated
  • 1 teaspoon ginger powder, or 1 Tbs raw grated
  • 1 teaspoon cinnamon powder
  • 1 teaspoon vanilla extract, optional
  • 20 g Butter or coconut oil, (oil for Vegan/dairy free)

Seeds to coat

  • sesame, poppy, chia or other seeds, to coat the balls (optional)

Recipe's preparation

    Raw Cookie Dough
  1. In your Mixing bowl simply combine the ingredients and chop for 10 secs./speed 6 for a course consistency. 


     

  2. For smoother cookie dough chop for 20 secs./speed 7. 

  3. Cookie Dough Balls
  4. Roll into balls and you can optionally coat in sesame seeds, poppy seeds, chia seeds or leave them plain. I like them with unhulled sesame, but for the little one I leave em plain as they make to much mess!

  5. Raw Ginger Slice
  6. You can also press into a tray, top with the buttercream I use for my Raw Brownies. Flavour the icing with ginger and vanilla before spreading over and you'll have a ginger slice in stead of balls. Chill until set then slice.

Tip

I like the authentic taste of real butter, however even with the coconut oil the walnuts are pretty buttery so its just as nice and then its raw food vegan.

  • Absolutely, you can use

    Absolutely, you can use pecans (very similar so they will be almost idential).

    Or you can use cashew or almonds or dessicated coconut but you may need a little more coconut oil to bring it together as they are a bit dryer and your raw cookies will not be as buttery (if not vegan you can just add some butter).

    You could also use dry apple if you want a nut free version as it is plain and will carry the ginger flavour well but they will be very very sweet. 

    You could use sunflower seeds for a nut free version too, grind them on their own first for 5 secs./speed 6 as they wont break down as easily as walnuts.

    So easy and so tasty, the little one LOVES these and being on the GAPS diet we cant have sugar so these and the raw brownies are always in the fridge!
