Ingredients

8 portion(s)

rice pudding

  • 860 g cooked rice, Any type of left over cold rice is fine. My rice was cooked with a 1/4 teaspoon of saffron in it.
  • 900 g Milk, (divided)
  • 120 g sugar
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 2 eggs
  • cinnamon sugar, to taste

Recipe's preparation

    Rice Pudding
  1. Put your cooked rice into Closed lid with 600g milk, sugar and salt. Cook 15 mins/ 90'C/counter-clockwise operation/Speed 2.


    Add remaining milk, eggs and vanilla mix for 3secs/counter-clockwise operation/Speed 3 then cook on 90'C for 5mins/counter-clockwise operation/Speed 2.


    Enjoy warm or cold with a sprinkle of cinnamon sugar.

    I'm a Coeliac and had been eyeing off my kids' morning porridge jealously while eating my cold cereal. Found this recipe and made up a full batch (brown rice and half sugar) to keep in the fridge and microwave a small serving every morning for breakfast - perfect!

    It's lovely as is, or plain enough to dress up with cinnamon, fruit, dried fruit, etc.

    Lovely! Loved that it's such an easy versatile treat that isn't overly "bad" if you make with almond milk, brown rice and halve the sugar (I used Maple Syrup instead of sugar) and added sultanas. My substitutions worked perfectly with this great recipe. It was also left over rice from the freezer that I lightly thawed. Thanks for sharing!

    I make this often with any amount of rice. Adjust the milk and sugar to suit, and cook for 10-15mins, I add the egg/s in the first cook time, and works fine! 😊👍🏻

    Great recipe, thanks!

    I modified it because I didn't have that much left-over rice. I used 160 g cooked basmati rice, 200 g coconut milk, 30 g brown rice sugar, 1 egg, a dash of vanilla extract, handful of sultanas. I reduced the cooking time from 15mins to 7mins, and 5mins to 1min. I also left the M/C off during the cook time.

    Perfect amount for two people!

    Loved this recipe, made a few changes, used up some coconut milk left over from my curry, and added some sultanas. Also I used left over brown rice and used rapadura sugar. Yummy thanks

    This was yummy & a great way of using up left over rice. I too halved the ingredients and put in less sugar. I didn't have quite enough fresh milk so added some coconut milk instead.

    Very yummy. It reminds me of exactly what I used to buy at my local charcoal chicken. Now I can easily make this myself. It does make a massive batch so I think halving it would be the way to go next time.
