Sourdough buckwheat & blueberry pancakes

Ingredients

18 piece(s)

  • 350 grams Buckwheat groats, (2 cups)
  • 800 grams filtered water, (4 cups)
  • 75 grams filtered water, extra
  • 4 pinches unrefined sea/rock salt
  • 4 eggs
  • 1 pinch creme of tartare
  • 200 grams milk, nut milk or coconut milk
  • 2 tsp vanilla extract
  • 40 grams Quinoa flakes
  • 120 grams Frozen Blueberries
  • non-virgin coconut oil, for deep frying

Recipe's preparation

  1. 1. Weigh buckwheat and water into a bowl with 2 pinches salt. Cover with a plate and leave at room temperature to soak for at least 9 and up to 24 hours.

    2. Rinse through a fine seive to remove any slime and residual tannins.

    3. Add buckwheat to mixing bowl with 2 pinches of salt and extra 75g water and blend 20sec, sp 5. Add extra water if needed to get the consistency of a pancake batter.

    4. Return to original clean bowl, cover and leave to ferment for another 12-24hrs. The mixture will rise and bubble and may smell slightly as the good bacteria goes to work. The mixture is then ready to use or can be stored in the fridge up to 4 days.

    5. Separate eggs, adding yolks to buckwheat mixture and egg whites to a clean, dry mixing bowl. Add creme of tartare to egg whites, insert butterfly and whip until firm, approx 2min, sp 3.5. Set aside in small bowl.

    6. Add buckwheat mixture and yolks to unrinsed mixing bowl with milk, vanilla and quinoa flakes and blend 20sec sp 5. Extra milk or quinoa flakes can be added to desired consistency.

    7. Add blueberries and egg whites and fold through using spatula.

    8. Shallow fry egg-ring sized portions of mixture in coconut oil, turning mixture once bubbles have formed.

Tip

You need to plan ahead 1-2 days to allow for soaking and fermentation time. Soaking and fermenting the buckwheat makes the groat much more nutritious and digestible.

The recipe can easily by halved or 2/3 successfully.Serving suggestion:We love ours with pure maple syrup and slices of banana & strawberries on top!

Variation:Omit the blueberries and vanilla extract and add a large banana and 1tsp cinnamon in step 6.

    Omg! These are fantastic. Bit of work involved but worth it. Feels like your doing something really good for your body but also having a treat. Buckwheat has so many health benefits as well as activating them and fermenting as well Which just adds more benefits again tmrc_emoticons.)
