STRAWBERRY ICE CREAM

Ingredients

  • 150 grams white sugar
  • 2 egg yolks
  • 500 grams full fat cream
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 200 grams strawberries, hulled

Recipe's preparation

  1. 1. Place sugar into mixing bowl and mill 2 sec/speed 9. Add egg yolks, cream, vanilla, and salt; cook 6 min/80 deg C/ speed 4. Pour anglaise mixture into container and allow to cool.

     

    2. Place strawberries into mixing bowl and blend 10 sec/speed 9.  Add anglaise to strawberries, mix together 5 sec/ speed 4. Pour into a container and freeze for at least 8 hours.

     

    3. Remove from freezer, cut into squares, place into mixing bowl and blend for 20 sec/speed 9, then 10 sec/speed 4. Place into an airtight container and freeze for at least 4 hours. ENJOY tmrc_emoticons.)

Tip

This is basically the vanilla ice cream recipe from the Everyday Cook Book with 200g of strawberries added.

 

If you don't want strawberry seeds in your ice cream you can put the pureed strawberries through a fine seive before adding the anglaise.

    My family love this! I will reduce the sugar next time and add more strawberries (should have read the comments first). I had trouble blending the ice cream after the first freeze. I had to do it in two batches. Worked a treat with 0.50c per punnet strawberries, Thank You!

    Mulberry Icecream: Thank you for this recipe. I used it to make mulberry (instead of strawberry) icecream. I used 300gms of mulberries and 75grms sugar. The whole family loved it and I will be making plenty more, especially as our mulberry tree is yielding well this year.

    Absolutely Beautiful! A nice, smooth, creamy texture, with a strong strawberry flavour. We didn't strain the seeds but perhaps next time we will; they were a little chewy. Went brilliantly with a choc-honeycomb ice-cream we made a few days earlier.

    I've just made this for my husband. I reduced the sugar to 100 grs and next time I will reduce it to 75 grms, That said it tastes amazing, and my husband is a very happy boy. Our TM5 arrived yesterday and this is the first thng I've made, so thank you for the wonderful recipe.

    Oh yum. Cant believe I've had Thermie for over 3 years and have only just discovered this. Reduced sugar to 80g after reading some comments. Still sweet enough. Relativley easy to make. Found that using a metal spatula to remove the frozen squares made it easier than with plastic. Thanks for the recipe!

    Hi, This is a great recipe, it always works.  I have also used this recipe

    (without the strawberries) to make chocolate icecream.  I added 200grm Lindt 70% dark chocolate and 2 scoops of good quality cocoa powder.  Very decandent.

    This was fantastic.  I just used the whole punnet of strawberries that I had.  I only used 100g of sugar but next time I will probably only use 50-60g of sugar as it was a little bit too sweet.

    Awesome taste thank you! Feel like a pro ice cream maker now! But just wondering if you need to freeze for at least 8 hours in step 2 or if can follow edc and just freeze for 4 hours before it's totally frozen?? It took me ages to cut it and remove it from container in order to churn it - had to wait til it melted enough.

    Delicious ice-cream, better than store bought! I substituted the sugar for coconut sugar, found the ice-cream on the sweet side so will reduce the sugar next time. The sweetness would also be dependant of how ripe your fruit is. I couldn't wait the extra 4 hours of freezing so after an hour I enjoyed a beautifully creamy ice-cream!

    Made this with raw sugar, thickened cream (as that's all Aldi has), and frozen strawberries. The result was amazing! Not too sweet, but I might decrease the sugar to 100g next time. Might add more strawberries just so the flavour is more intense. Great recipe. Thanks tmrc_emoticons.-)
