  • 4 tbsp passionfruit pulp
  • 300 g Fresh strawberries
  • 5 g fresh lemon juice
  • 100 g sugar, Use Xylatol if you want a sugar free version
  • 3 eggs, Room temperature
  • 560 g low fat vanilla yoghurt, Or plain greek for sugar free

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. Line the long sides of a small loaf pan with cling film - leaving enough over the edges to fold over and enclose the semifreddo

    Spoon the passionfruit pulp over the bottom

    Add the sugar to the TM & mill for 10 secs / speed 9

    Remove the tops off the strawberries & place 250g into the TM bowl along with 10g of the icing sugar & lemon juice

    Chop coarsley for 5 secs / speed 5

    Spread over the passionfruit & place into the freezer

    Wash & dry your bowl well

    Insert the butterfly

    Add the eggs & the icing sugar & whip for 5 mins / speed 4 until pale and thick

    Add the yoghurt

    Mix for 10 secs / speed 2

    Spoon yoghurt mixture over the strawberries, fold over the cling film and freeze overnight.

    The next day, transfer the semifreddo to the main part of the fridge for 20 minutes before serving.

    Unwrap the cling film, add remaining strawberries & extra passionfruit & cut into slices.

Tip

You can use any yoghurt for this recipe, it still turns out yummy!

If you don't like passionfruit, use crushed pineapple - but make sure all the juice has been strained off
