Tofu pudding
- 100 g dry soy beans, soak overnight
- 3 g Delta- Gluconolactone (GDL)
- 1000 g water, some extra for soaking

Recipe's preparation
- 1. Drain soaked soybean and rinse well
2. Place into TM bowl with 1000g cold water, blend on 3 mins/speed 10
3. Drain the blended soy milk with muslin cloth or a nut milk bag
4. Cook the drained soy milk for 25 mins/100 degrees/speed 1
5. Let it cool down to 85 degrees, you can let it sit in the bowl and read the temperature on the screen
6. Mix 3g of GDL and 1 tablespoon of water in the 2.6L thermoserver
7. Pour the 85 degrees soy milk in the thermoserver
8. Do not stir it, close the lid, let it set for 15 mins
9. Tofu pudding is ready, the dessert that you have in yum cha, serve with sweet syrup
