Ingredients

  • zest of one orange
  • 250 g plain sweet biscuits, wheatmeal/arrowroot
  • 70 g Butter, cubed
  • 20 g fresh ginger, peeled
  • 1 vanilla bean, cut into 4 pieces
  • zest of one lemon
  • 350 g Milk
  • 5 g gelatine
  • 120 g raw sugar
  • 350 g cream
  • 40 g cornflour
  • 6 egg yolks

Recipe's preparation

  1. Preheat oven to 160C.

    Place orange zest in TM bowl and grate for 10 seconds on speed 8.

    Add biscuits and crush for 10 seconds on speed 8.

    Add butter and mix for 1 minute at 50C on speed 3. Spread mixture evenly in the base of a cheesecake tin and press down firmly with palm of hand until it covers the base completley. Bake for 10-15 minutes then remove and allow to cool.

    Stir the gelatine into a small cup holding 50g cold water and set aside to soak.

    Place ginger, vanilla, lemon zest and sugar in TM bowl and chop for 8 seconds on speed 7. Add milk and heat for 4 minutes at 100C on speed 1. Add cream, cornflour and egg yolks and mix for 15 seconds on speed 4 to combine. Insert butterfly and cook custard for 7 minutes at 100C on speed 1.

    Add gelatine and mix for 20 seconds on speed 2 to dissolve gelatine.

    Pour mixture through a fine sieve straight into the cheesecake tin. Tap the tin gently on the bench a few times to release air bubbles and allow to cool before placing in the fridge to set. When completely cold slice and serve with cream and fresh fruit.

    tmrc_emoticons.) Thanks Ros - I love the slight citrus tang in the tart base with the ginger and vanilla custard so personally find this addictive! Make it when you have lots of people coming round so you aren't tempted to eat the whole thing yourself!!!
