BASE

  • 160 g raw almonds
  • 20 g Shredded coconut
  • 40 g coconut oil
  • 80 g Rice malt syrup
  • 40 g Vanilla Protein Powder, (OR plain protein powder + 1 tsp vanilla extract OR omit all together)

FILLING

  • 120 g Rice malt syrup
  • 90 g Smooth peanut butter

TOPPING

  • 100 g dark vegan chocolate
  • 40 g coconut oil

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    BASE
  1. Place almonds in mixing bowl and mill 10 seconds/speed 9.
  2. Add shredded coconut, coconut oil, rice malt syrup & protein powder. Mix 25 seconds/speed 5.
  3. Press into silicone mini muffin tray and refrigerate while preparing the filling.
  4. FILLING
  5. Add rice malt syrup and peanut butter to mixing bowl. Cook 2 minutes/80°C/speed 3.
  6. Divide evenly between all bases in the muffin tray. Refrigerate while making the topping. Clean and thoroughly dry mixing bowl.
  7. TOPPING
  8. Place dark chocolate in mixing bowl and chop 10 seconds/speed 6. Scrape down sides. Add coconut oil and cook 3 minutes/50°C/speed 2. Working quickly, pour evenly over the filling in the muffin tray.
  9. Refrigerate until set and then remove from tray and enjoy!
