Ingredients

Blueberry White Chocolate Mousse - Vegan & Protein rich9

  • 360 g white chocolate, vegan, adjust to taste
  • 900 g silken tofu
  • 1 level tsp Vanilla Paste, paste or powder
  • 60 g Maple Syrup, pure, adjust to taste

Fruit Coulis

  • 250 g fruit, fresh or frozen
  • 75 g sugar raw, adjust to taste
  • 15 g lemon juice, approx half a lemon

Recipe's preparation

    Fruit Coulis
  1. Place fresh fruit, sugar and lemon juice into mixing bowl and blend 30 seconds / speed 5 - 10, increasing speed gradually from speed 5 to speed 10.
  2. Cook 5 minutes / 90ºC / speed 2.
    Allow coulis to cool before use.
  3. Blueberry White Chocolate Mousse
  4. Grate chocolate - 3 seconds / speed 7.
  5. Melt the white chocolate 3 minutes / 50ºC / speed 1. Allow chocolate to cool to slightly.
  6. Add remaining ingredients then mix 3 minutes / speed 9.
  7. Swirl the fruit coulis through the liquid mousse mixture then set in the fridge overnight.
